Cucumber

For Ezra Cucumbers were love from first bite
They are definitely a food he can't get enough of

Ezra like to eat the inside of the cucumber but not the skin - we keep the skin on to make it easier to hold for him

How we served them:
RAW: I used mini baby cucumbers - cut of the ends - quarters - and chopped to adult finger size

Carrots

After Ezra Tried Sweet Potatoes I knew I wanted to try Carrots. I had heard from a friend that they were great for teething babies so first we tried them cold and raw
But Ezra Preferred them soft and boiled
and liked them roasted with some spices too

How we cooked them:
We first tried Raw but that wasn't cutting it for Ezra he didn't want a toy but something he could EAT!

Boiled:
Directions: Chop and peel about 5 carrots into fries and boil in a cup of water for 8 minutes
Serve: Ezra liked these cold right from the fridge - no need to heat up

Baked:
Directions: Chop and peel about 5 carrots into fries - toss with olive oil, garlic powder, and Italian seasoning - bake at 350 for 20 minutes
Serve: Ezra liked these cold right from the fridge - no need to heat up

Sweet Potato

Sweet Potato was the first food Ezra got to try and it was love from First Bite
He was even happy just to hold and play with the raw potato
We started out with mashed sweet potatoes
but quickly moved onto picking up and eating chunks

How we cooked them:
I prepared the sweet potatoes in the pressure cooker for both the mashed and chunks of Sweet Potato

Ingredients:
5 Sweet Potatoes
1 Cup of Water

Directions:
1) Rinse Sweet Potatoes and put them on a steaming rack in your pressure cooker
2) Put on Lid and set Cooker for 12 minutes on Manual
3) Quick Release Steam when done

Serve:
AS IS: for a "baked" potato
MASHED: by throwing in a blender with a bit of milk or water from the cooker till smooth
CHUNKS: Cool down then chop (the colder the potato the easier to cut)
